
I have a cold and I still want to eat…maybe I have that saying backwards. I think this cruddy cold is part II of what I had a few weeks ago. I don’t know if that’s possible, let’s just say it’s true-
A friend said she had made homemade spaghetti and meatballs after seeing my pasta mac n’ cheeses post. The meatballs she made had me thinking of this Italian wedding soup recipe. I love the soup and the meatballs are super yummy. So I guess the pasta post came full circle because my husband made me the soup last night, it did help my cold/our cold. So must tell her thanks for the inspiration! Thanks :)
If you make this recipe I’ll share a few hints. We always double the meatball recipe. After they get baked off they freeze really well and then it’s a really quick way to make a second pot of soup or they make delicious meatball subs. Also I run the chicken breasts and the chicken sausage together through the grinder it’s an easy way to blend the meat. Make sure you keep the meatballs seperate from the soup until you’re ready to eat. The flavor doesn’t hold well if the they are stored in the broth. That’s it! Try it, it should make you happy!
One other thing I do if any of us are under the weather or having aching muscles is a Dead Sea salt bath. It’s an easy relaxing way to detox. I use this brand of salts and I add some essential oils. Usually I add bergamot and clary sage just a few drops both are good for your skin. I add some sweet orange too, if I haven’t run out…the orange scent is uplifting. You can might have a good source for your oils already I usually get mine from here.
Okay I’m souped up and detoxed now I need this cold to leave!
