
Hello Monday- Oh, such happiness kiddo came in for a long weekend! I’m sipping a cup of coffee this morning and looking over my photos. It was a good weekend. I’m also sitting here wondering why the lawn guy is trimming the hedges when they are in full bloom…oh well
1) She took the train home which was a new way for her to travel, bumpy and too long was her response
2) she gave up gluten, soda and candy for lent (that is some willpower) so we put on our thinking caps and tried to come up with gluten free meals. After her late night pick up from the train, we had fish tacos. The blue tortillas are from Trader Joe’s. I was so hungry I figured out after I took my pic that I didn’t get a scoop that showed off everything in the salad: jicama, oranges, mango, avocado, jalapeno, cilantro (if you want to try it-dress it with salt, olive oil, orange juice & chili powder) It is really good, better than the photo
3) a big bowl of marinated veggies for snacks or a side over the weekend.
4 )I had a busy day in class. I got these pitchers glazed, fingers crossed they fire well, new glazes…
5)Saturday night dinner fried polenta this one is corn/quinoa. These rounds got topped with shredded roast chicken (thank you Costco) marinara and a little Humbolt Fog- amazing. No additional pics because we were hustling to get to the movies (John Carter, it was good)
6)tried a gluten free pancake mix (Arrowhead Mills) not bad. I figured out though to cook them slowly and slightly under so they stay tender
7)cleaned out and popped in some new plants into the pots outside
8)the pups always get a mini pancake :)
9)I helped paint some finger nails. Yep it was chilly enough here in the evenings for goose bumps.
10)one more planter, the colors against each other really vibrate
11)getting ready for our big St. Patrick’s Day party!
