Hello Monday

I’m saying hello to a second week of my “diet”. So here is hello to part 2 of no dairy, wheat & sugar…I am so missing something baked and I think I’ve got a good recipe figured out so I can enjoy a treat. Stay tuned I’ll share as soon as soon as I’ve got it down!

I picked up these carrots they are beautiful and delicious. The yellow ones are super sweet. This salad we’ve made a few times for lunch: pinto beans (rinsed & drained), mexican onion, jicama, carrots, red pepper, corn, avocado and an apple cider & lime vinegarette. Of course you could throw in some goat cheese if you were feeling like it ;)

snacks: raw pumpkin seeds with a little canola oil a tiny tiny bit of liquid smoke those I roasted until they popped like popcorn then I tossed them with smoked sea salt, very good almost too good…of course fruit is easy, but I had the best strawberries of the year-local farm stand, they were so perfumed and wonderful.


our Saturday produce basket was as amazing as ever. If you haven’t had an organic potato roasted that has just come out of the ground well you’re missing something. Yep, simple and nothing else like it.


always time for a few blooms. Quinoa pasta is really good it stays firmer than rice pasta. I made a big batch of turkey marinara with lots of chunky veggies and yes it got a little goat cheese.

One thing I didn’t grab a pic of was a salad that will be a summer favorite here: napa cabbage sliced into strips, fennel, green onions, granny smith apples and a vinegrette of fresh orange juice, honey, apple cider vinegar, rice wine vinegar, roasted sesame seed oil, a little canola oil & a pinch of salt seriously delicious.
